In a shallow bowl, mix together coconut milk (read notes), milk, eggs, sugar, vanilla extract, and a pinch of salt together.
In a separate bowl, place the shredded sweetened coconut flakes. Break the coconut flakes apart by using your fingers or fork.
Spread 2 tablespoons of Nutella on a slice of brioche bread and sandwich it together with another slice of brioche bread. Repeat this process for the remaining tablespoons of Nutella and brioche bread. Set aside.
Heat up 1/2 tablespoon of butter in a frying pan over medium heat. Once the butter is melted, dunk one sandwich completely into the coconut milk custard (2 seconds per side). Do not oversoak the sandwich. Then place the sandwich into the bowl of coconut flakes and lightly coat both sides of brioche bread. Do not pack too much coconut flakes on the bread or it will burn during the cooking process.
Place the sandwich on the frying pan and lightly press it down to sear the French toast. Let the French toast cook for one minute then turn over, lightly press the bread down again and cook for another minute. Once both sides of the French toast are golden brown, remove from the frying pan.
Repeat the cooking process with the remaining three sandwiches. Serve warm with natural maple syrup and a side of fruit and enjoy!
