Nutella Stuffed French Toast with Coconut

Nutella makes everything taste better and this Nutella Stuffed French Toast with Coconut is no exception. The luscious Nutella oozes out of the coconut-crusted French toast. Moreover, the combination of coconut and Nutella is a surprisingly fabulous flavor combination. One bite of this Nutella Stuffed French Toast with Coconut and you will be hooked!

This recipe is very easy to make and perfect for breakfast with the family. With that said, the French toast is on the sweeter side but not too overpowering. Serve it with a side of eggs, bacon, and fruit – and you have yourself a breakfast for champions!

The Inspiration Behind Nutella Stuffed French Toast with Coconut

My recipe for Nutella Stuffed French Toast with Coconut is inspired by our honeymoon at Jade Mountain in St. Lucia. To this day, this trip is one of our absolute favorite vacations. Rightfully because it was our honeymoon, but more so because of the food, people, excursions, scenery, and our beautiful all-inclusive resort.

One of the excursions we enjoyed at Jade Mountain was jungle biking at Anse Mamin Plantation. During this excursion, a coconut fell from a tree right next to us. Our guide picked up the coconut, took his machete, and sliced open the coconut right before our eyes! That day, we enjoyed the freshest coconut water after and it was delicious.

With that said, coconut is widely used and found throughout the island. From coconut drinks inside a coconut, coconut shrimp, coconut cakes, and more. Moreover, as part of Jade Mountain’s initiative, the culinary team always implements a lot of local ingredients into all of their dishes – this includes breakfast.

The breakfast menu remained the same during our entire time at Jade Mountain. One dish Adam enjoyed five of the six days we were there was… can you guess it? Yes, Nutella Stuffed French Toast with Coconut! Hence, my inspiration for this recipe.



Nutella Stuffed French Toast with Coconut Ingredients

One of the ingredients that truly makes this French toast special and delicious is the bread. Brioche bread is hands down one of the best French bread inventions of all time and it is perfect for French toast. You can make brioche bread from scratch or find it at your local grocery store. However, if you cannot find or make it, Texas Toast or any sliced bread will also be fine to use.

How to Make Nutella Stuffed French Toast with Coconut

In a shallow bowl, make the custard by mixing together the coconut milk (read my tips below), milk, vanilla extract, eggs, sugar, and salt together in a bowl. Then prepare another shallow bowl for the shredded sweetened coconut flakes. Using your fingers or a fork, break up the coconut flakes so they are not all clumping together.

To make the process easy, I would place the shredded coconut bowl closest to the stove and the bowl of custard on the other side of it. So you can dip into the custard, followed by the coconut, and lastly, place it on the frying pan.

Make a sandwich by spreading Nutella on one slice of brioche bread and topping it with another slice of bread. Do this process, three more times and set aside.

Melt the butter into a frying pan over medium heat. Dunk the Nutella sandwich into the custard on both sides. Next, place it into the bowl of shredded coconut and lightly coat both sides of the bread. Once coated, place the sandwich onto the frying pan and cook for one minute until lightly golden brown. Flip the sandwich, slightly press it down, and cook for one more minute. Remove your perfectly cooked French toast from the pan. Do this process for the remaining three Nutella stuffed sandwiches.

Serve warm with natural maple syrup and a side of fruit.

Tips and Tidbits

Here are a few tips and tidbits to help you make Nutella Stuffed French Toast with Coconut.


Mix the Coconut Milk Before Use

When you open a can of coconut milk, there will be separation from the liquid and coconut cream “white solids”. So you want to mix both together to create a homogenous liquid before you measure it. I like to pour all the coconut milk components from the can into a bowl and whisk everything together until smooth. Then I measure the coconut milk.


Do Not Over Soak the Bread

When you dunk the bread into the custard, you want to do it quickly – just enough to soak the bread completely on both sides. If you keep the bread in the custard for too long, it will be too soggy and not crisp as well when you cook it. I recommend dunking the sandwich in the custard for two seconds per side.

A Thin Layer of Coconut is the Key

Coconut has a lot of natural sugars. Therefore, when you have too much coconut flakes on the bread, it can burn quickly. Moreover, the outer layer will be dark/burnt before the entire bread is finished cooking. In addition, there will be a lot of coconut flakes uncooked closer to the bread. So when you take a bite, you will see a lot of “white” coconut flakes instead of golden brown ones.

To create a thin layer of coconut, I recommend dunking the bread into the coconut and shaking off any excess coconut. Furthermore, I will also ensure that there is a thin layer before I add the bread to the pan. Sometimes this requires me to use my fingers to lightly coat the bread in coconut flakes.


What If I Do Not Like Coconut?

If you do not like coconut, here is how you can omit it and still enjoy Nutella Stuffed French toast. Substitute the coconut milk for cream and simply omit the coconut flakes all together. Dip the Nutella stuffed sandwich into the custard, cook the bread as usual, and that is it! You have Nutella Stuffed French Toast without coconut.


What is Brioche Bread?

Brioche bread is a very rich bread made with a lot of high protein and fat i.e. eggs, milk, and butter. These ingredients are what makes this French bread so rich in flavor with a light and fluffy texture.

A coconut-crusted French toast filled with luscious Nutella. This French toast is perfectly sweet with a rich, nutty flavor of Nutella that oozes out after one bite.

Ingredients

  • 1/2 cup milk
  • 1/2 cup coconut milk
  • 4 eggs
  • 2 tablespoons sugar
  • 4 teaspoon vanilla extract
  • 1 cup shredded sweetened coconut flakes
  • 8 tablespoons Nutella
  • 8 slices of brioche bread
  • 2 tablespoons butter
  • Salt

Instructions

  1. In a shallow bowl, mix together coconut milk (read notes), milk, eggs, sugar, vanilla extract, and a pinch of salt together.
  2. In a separate bowl, place the shredded sweetened coconut flakes. Break the coconut flakes apart by using your fingers or fork.
  3. Spread 2 tablespoons of Nutella on a slice of brioche bread and sandwich it together with another slice of brioche bread. Repeat this process for the remaining tablespoons of Nutella and brioche bread. Set aside.
  4. Heat up 1/2 tablespoon of butter in a frying pan over medium heat. Once the butter is melted, dunk one sandwich completely into the coconut milk custard (2 seconds per side). Do not oversoak the sandwich. Then place the sandwich into the bowl of coconut flakes and lightly coat both sides of brioche bread. Do not pack too much coconut flakes on the bread or it will burn during the cooking process.
  5. Place the sandwich on the frying pan and lightly press it down to sear the French toast. Let the French toast cook for one minute then turn over, lightly press the bread down again and cook for another minute. Once both sides of the French toast are golden brown, remove from the frying pan.
  6. Repeat the cooking process with the remaining three sandwiches. Serve warm with natural maple syrup and a side of fruit and enjoy!

Notes

Before you measure the coconut milk, remove all the contents from the can and mix together in a bowl to create a homogenous liquid. Then measure the coconut milk for the custard.

If you do not like coconut, you can still enjoy this recipe! Just omit the coconut flakes and substitute the coconut milk for cream.
